They’re made with whole food ingredients, naturally sweetened, and packed with plant-based protein. I like having them as a quick breakfast when I’m on the go or as a light dessert that doesn’t feel overly indulgent. The crust is actually my go-to base for protein bites, so it’s a familiar favorite.
You can store these bars in the fridge, but I recommend keeping them in the freezer to hold the shape of the creamy filling. Just let them sit at room temperature for a few minutes before enjoying.
What You’ll Need
This recipe has two layers. A soft, chewy crust and a creamy blueberry topping.
Bottom Crust Layer
3 tablespoons hemp seeds
1/2 cup nuts of your choice
4 pitted dates
1 tablespoon nut butter
1 scoop vanilla protein powder
1 tablespoon maple syrup
Pinch of sea salt flakes
Cream Filling
1 cup coconut cream or yogurt of your choice
1 tablespoon maple syrup
1 cup frozen wild blueberries
How to Make Them
Step 1: Prepare the crust
Add all the crust ingredients into a food processor and pulse until well combined. The mixture should stick together when pressed. Line a small pan with parchment paper and press the crust mixture firmly into the bottom.
Step 2: Mix the filling
In a bowl, stir together the coconut cream or yogurt, maple syrup, and frozen wild blueberries. Spoon the mixture over the crust and spread it evenly.
Step 3: Freeze and slice
Place the pan in the freezer for about one hour, or until the bars are set. Once frozen, remove and slice into six to eight bars depending on your preferred size.
